“It has been 6 months since I completed the 3 month R.O.O.T.E.D. Transformation Program and I am still grateful everyday that I found Katie’s website. Dig in to Katie’s Whole Foods cooking classes! Katie is a great host and instructor. She explains each step of a recipe by telling you what cookware and ingredients you may need and if you don’t have it, where you can get it and how much it could cost you (i.e. a dehydrator) and easy substitutions you don’t have some of the ingredients. All these are important tips for busy cooks who want to eat healthy on a budget. Many of her classes have themes-raw Mexican night, raw desserts–so you learn a variety of foods to prepare that are so delicious you don’t realize how healthy they are! While these classes are typically free, I have paid for some of Katie’s other classes she provides outside of the grocer. So far, I think my favorite recipe is the Nacho Cheeze Kale Chips-so easy, nutritious and your taste buds think you’re eating Doritos!

I cannot recommend Katie’s cooking classes enough. She is a shining star with such a wonderful attitude that even her smile will brighten your day. Her energizing classes are full of great health information, tips and enthusiasm to start or continue your healthy journey – then you taste her food!
WOWZA – watch out, the lines for seconds get pretty crazy (I suggest you bring a helmet and some football pads). I admit to licking the plate once – I don’t think anyone noticed… but I didn’t care if they did – it was that good!
This last year I have been fortunate enough to attend several of Katie’s classes and she has been a big support and reason why I have decided to change careers to holistic nutrition! “One week later I am still feeling great. I am still not having the afternoon slumps that I used to have so bad and I feel like my ‘dependency’ on caffeine and sugar are still totally GONE. I have indulged in sweets and just a few caffeinated (or my new favorite: half caff) beverages in the past week. But I have found that my wanting to have a bit of either of these has less of a “give-me-coffee-right-now-or-I’ll-shoot” feel to it and more of “oh-coffee-might-be-nice” feel.
I will admit I had one incident last week where I was tired and stressed and a little over-emotional and I went straight for the Twizzlers. I am an emotional eater. It’s the truth. But I realized as I was fisting those Twizzlers that the simple truth was that they weren’t going to make me feel better, in fact, likely only worse. And in the moment I was proud of myself for properly distinguishing the truth. That’s not to say that I haven’t enjoyed Twizzlers recently in a healthy way, I have.
Another strange phenomenon that my husband and I both experienced during the cleanse was a lack of appetite. Or a lower appetite than usual. (a lot of people assumed we would feel starving through the whole process, including myself and that just wasn’t the case). For me I no longer have extreme lows in blood-sugar (if you know what those are like you likely know the feeding frenzy that occurs during them) and that has helped me to continue to eat healthy. But still overall, we have both noticed a large drop in our actual appetite. We have had two large social events since the cleanse has been over where there was an OVER-abundance of food and where we could have left feeling yucky and overstuffed but we didn’t. And that is an AMAZING feeling.
I don’t count my pounds too closely, but I would bet that I lost about 2 to 3 pounds during the cleanse. Just enough to make a little bit snug pair of pants fit perfectly. My husband reported losing 4 pounds. And while the cleanse’s sole purpose isn’t weight loss, it is a nice side effect.
Also, my skin has been SUPER clear… this past winter and spring I had a lot of problems with it breaking out. I have taken some other steps to remedy the situation – but since the cleanse I haven’t even had one small breakout.

“It has been so interesting to notice the affect different foods have. Before I wouldn’t have been able to identify which foods made me feel what, but I feel like I can now. After three days of feeling pretty junky, on day 4 I finally started feeling good. Really good! Great energy, a positive attitude, and (like you said) mental clarity! Had you asked me beforehand, I would’ve said there was nothing wrong with my mental clarity. Now I get it. I’m more focused, more motivated and more on top of things around the house.
